Some tests use __bootPackages, and we'd like to support that even
if we override stdenv, e.g. to add devShell to mkDerivation in a
later commit.
Reverts #420051 as FreeCAD now crashes when creating and opening files,
as well as when changing some settings, making the program unusable
(source FreeCAD/FreeCAD#22695).
The update script depends on jq, which was not provided in the
environment, which made nixpkgs-update fail.

The library is build for the platform the built gobject-introspection will run
on, which is the hostPlatform, not the targetPlatform.
