docs: add section on customizing knotserver paths #69

Discussed in the Discord briefly, but I was curious on how to change the paths on my knotserver, and ran into the somewhat-undocumented argument on keyfetch. It might be nice to have the default path as /home/git/repositories for future setups, but that's out of scope for this PR.
